As you age, the body produces less and less of an enzyme called catalase which is responsible for synthesizing hydrogen peroxide in the body. Lower and lower catalase production results in higher and higher levels of hydrogen peroxide. This hydrogen peroxide build up creates hydroxyl radicals that destroys tyrosinase which as mentioned before is absolutely critical to hair color.

Hydrogen peroxide then goes on further to damage methionine sulfoxide reductase A and B, which keep methionine sulfoxide in check. The combination of higher levels of hydrogen peroxide and lower levels of Methionine sulfoxide reductase A and B not only break down the enzyme tyrosinase but make it harder for the body to produce the enzyme tyrosinase, which again is the key enzyme in giving the hair its color. Managing all these factors is critical to staving off gray hair.
